Mexican Sloppy Joes

Ingredients
- 1 lb. ground beef
- one 10-oz. can tomatoes and green chilies
- 1 envelope taco seasoning mix
- 1/4 C. water
- 1 tomato, peeled and chopped
- 8 hamburger buns, split and toasted
- 2 C. shredded lettuce
- 1 C. shredded Monterey Jack cheese
Directions
In a skillet, brown the meat; drain off fat. Stir in tomatoes and green chilies, taco seasoning mix, and water. Bring to boiling; reduce heat. Boil gently, uncovered, until thick, about 15 minutes. Stir in tomato; heat through. Spoon onto toasted buns. Sprinkle each of the burgers with lettuce and shredded cheese.
