This fast and easy Microwave Cajun Chicken recipe will make a tasty chicken dish with minimum hassle. The recipe adds some Dijon mustard and honey for a richer taste. You can't go wrong with this simple dish!

  • 2 1/2 lb. broiler-fry chicken, skinned & pieced
  • 1 Tbs. honey
  • 2 Tbs. dijon mustard
  • 1/2 C. corn flakes, crumbled
  • 1 Tbs. tomato paste
  • 1/2 tsp. celery salt
  • 1/2 tsp. paprika
  • 1/2 tsp. poultry seasoning
  • 1 Tbs. tomato paste
  • pinch of salt
  • black pepper, finely ground

Combine the tomato paste, honey and mustard in a small bowl
Take a wax paper and mix the poultry seasonings with the celery salt, paprika, cornflake crumbs, black pepper and salt
Dip the chickens well in the mustard mixture and make sure that all the pieces are well-coated on both sides
Then roll the pieces in the crumbs mixture
Arrange the pieces in a 8X11 baking dish
Cover the dish with waxed paper and cook on HIGH for 12-14 minutes
Take out the dish and let the chicken sit in room temperature for 5 minutes before serving
