Microwave Chicken Dinner For One

I live alone and am always looking for simple balance meals that are easy to prepare. This delicious chicken dish is really simple to make and with the addition of peas, corn and green beans it gives you right amount of your daily dose of veggies.

  • 1 chicken breast or 2 thighs
  • 1 medium potato peeled and sliced thin,
  • Peas,
  • Green beans,
  • Wax beans or corn
  • Salt
  • Pepper
  • Garlic
  • Onion
  • Parsley

Put chicken in a 3 qt. casserole and microwave on high for 5 minutes. Remove and drain fat. Take a sharp knife and punch slits in chicken. Sprinkle with salt, pepper, garlic, and onion powder. Add potatoes, vegetable, and sprinkle all with parsley. Cook on high for 10 minutes.
