Microwave Meatloaf

This meatloaf recipe is quick and easy, my husband loves it!

  • 1 1/2 lb. ground beef
  • 1 egg, beaten
  • 1 C. bread crumbs
  • 2/3 C. milk
  • 1 sm. onion, chopped
  • 1 sm. can mushroom pieces, drained
  • 1 Tbs. Worcestershire sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 C. catsup

Mix all ingredients together except catsup (ketchup). Put into a 9x5x3-inch microwave-safe loaf pan to shape into a loaf. Spread catsup over top. Cover with plastic wrap folded to allow expansion. Microwave on med-high (70%) for 22-24 minutes or until no longer pink. Let stand 5 minutes before serving.

  • I just wanted to know if anyone's tried this, and whether or not it's turned out soggy or mushy. I've always baked my meatloaves, so I was just wondering if, in the pursuit of convenience, there was any sacrifice made in the name of good texture....
