  • ¼ Cup of Flour
  • 1 Tablespoon of Brown Sugar
  • ¼ Teaspoon of Baking Powder
  • ½ Tablespoon of Butter
  • 2 Tablespoons of Almond Milk
  • 1 Tablespoon of Mashed Banana
  • 1 Teaspoon of Nuts
  • 1 Pinch of Salt
  • (if you want to make chocolate muffins, add in 1 teaspoon of cocoa powder)

In your mug of choice (after making sure it’s microwave safe), mix together the dry ingredients -- the flour, brown sugar, baking powder, cinnamon, and salt (and cocoa powder for chocolate muffins). Then, combine the butter and the banana to the mix until everything is as smooth as you can make it.

Now, add in your almond milk and mix well. Microwave it for 1 ½ - 2 minutes or until you can stick a toothpick into the center and it comes out pretty clean. Enjoy!
