Microwave Taco Beef Soup
Ingredients
- 3/4 lb. ground beef
- 1/2 C. chopped onion
- 1 (16 oz.) can stewed tomatoes, chopped
- 1 (16 oz.) can kidney beans
- 1 (8 oz.) can tomato sauce
- 2 Tbs. taco seasoning mix
- 1 sm. avocado, peeled, chopped
- shredded cheddar cheese
- corn chips
- sour cream

Directions
Brown ground beef with onion in lg. glass casserole in microwave on high for 3 to 4 mins.; drain. Add 1 1/4 c. water and next 4 ingredients, mixing well. Microwave on high for 5 mins. Microwave covered, on med. for 10 mins. Stir in avocado. Top each serving with cheese, corn chips and sour cream.
Makes 6 servings.
