Middle Eastern Pita Bread Salad
Ingredients
- 2 large pita breads
- 4 ripe plum tomatoes
- 1 medium cucumber, peeled, quartered lengthwise, and sliced
- 3 to 4 scallions, minced
- 1/4 C. chopped fresh parsley
- 2 Tbs. extra-virgin olive oil
- juice of 1 lemon
- 1/2 small head dark green lettuce
Directions
Preheat oven to 375 degrees. Cut pita bread into 1-inch squares. Place on baking sheet and bake for about 8 minutes, or until golden and slightly crisp. Combine remaining ingredients in a bowl and toss. Add pita bits and toss again. Serve immediately.
