This salad is known as a fattouche salad in the Middle East. It is a delicious side dish or appetizer that's full of fresh ingredients.

  • 2 large pita breads
  • 4 ripe plum tomatoes
  • 1 medium cucumber, peeled, quartered lengthwise, and sliced
  • 3 to 4 scallions, minced
  • 1/4 C. chopped fresh parsley
  • 2 Tbs. extra-virgin olive oil
  • juice of 1 lemon
  • 1/2 small head dark green lettuce

Preheat oven to 375 degrees.  Cut pita bread into 1-inch squares.  Place on baking sheet and bake for about 8 minutes, or until golden and slightly crisp.  Combine remaining ingredients in a bowl and toss.  Add pita bits and toss again.  Serve immediately.
