Different from other recipes, this one takes a lot less time to make yet still makes a great meal. Made with rotisserie chicken, vegetables and delicious parmesan cheese.

  • 2 C arborio rice
  • 1 white onion; chopped
  • 1 C green beans; chopped
  • 1 C corn kernels; cooked
  • 1 lb minced chicken
  • 1 C parmesan cheese
  • 4 C chicken broth
  • 1 C white wine
  • 1/2 C water
  • Salt
  • Pepper
  • Parsley; chopped

In a skillet or pan, put in the butter and cook the green beans and corn with water. Stir until veggies start to soften up.

Then, add in the rice and stir for 2 minutes. Later, pour in the white wine, close the lid and let it simmer for 2-3 minutes.

After that, add the chicken broth and chicken. stir. Turn the heat down to low and let it simmer again for another 10 minutes.

Finally, add in the cheese and stir until cheese is melted. Add salt and pepper to taste.

Pour the risotto on a serving plate, garnish with the chopped parsley and enjoy!
