Combine apples, sugar, butter, cream, cinnamon, and vanilla bean in a frying pan and cook over medium heat. Stir throughout until the sugar caramelizes and the apples become tender but still firm.

In a medium saucepan, combine 1 C. sugar with the salt and water. Cook until it just begins to caramelize. Take off of the flame and keep mixing until it turns amber. Pour caramel into the bottom of a 9-inch pie pan. Immediately add the sliced apple on top, using a wooden spoon to gently push the top and get them to stick.

Combine the remaining milk, cream, sugar, and spices and cook over medium heat until the sugar dissolves and it's warmed through. Slowly add the whisked eggs, remove from heat, and strain on top of the apples.

Place the pie pan in the middle of a large baking sheet or roasting pan. Fill the baking sheet or roasting pan halfway with hot water. Cover the entire apparatus with tinfoil. Poke the foil with a fork to allow steam to escape.

Heat oven to 325 degrees and place the baking sheet into the oven. Flan is completed when the eggs have set and the center has movement but is not a complete liquid. This should take about 40 minutes.

Alternatively, bake the flan in small ramekins, rotating the baking dish every 10 minutes.
