Minestrone with Sausage, Squash & Spinach

This has some tasty ingredients that you usually don't find in minestrone!

  • 1 lb. uncooked Italian sausage links
  • 2 1/2 C. butternut squash
  • 2 med. potatoes, peeled
  • 2 med. fennel bulbs, trimmed
  • 1 onion, chopped
  • one 15-oz. kidney beans, rinsed and drained
  • 2 tsp. prepared minced garlic
  • 1 tsp. Italian seasoning
  • two 14-oz. cans chicken broth
  • 1 C. dry white wine
  • 3-4 C. fresh spinach

Cut sausage, potatoes, and fennel into 1/2-inch slices.  In a skillet, cook sausage until brown.  Drain.  In a large slow cooker, combine squash, potatoes, fennel, onion, beans, garlic, and Italian seasoning.  Top with sausage and pour chicken broth and wine over all.  Cover and cook on low for 7-9 hours. Stir in spinach, cover, and cook for 10 more minutes.
