  • Crust:
  • 1 ½ cups flour
  • 1 tablespoon sugar
  • 2 egg yolks
  • 1/3 cup butter
  • Filling:
  • ½ cup sugar
  • ½ cup butter
  • 2 eggs, beaten
  • ½ cup almond, ground
  • ¼ cup flour
  • Topping:
  • 4 peaches, sliced
  • 2 tablespoons peach preserve

Rub the flour and butter together, resulting in breadcrumb like consistency. Mix in the sugar and add 1 yolk and 1 teaspoon of water. While mixing, add the second yolk and 1 teaspoon of water, mixing the dough until it comes together. Split the dough into 8 even pieces. Flour the bottoms of the mini 4-inch pans and evenly spread the dough into the pans, remembering to press along the bottom and sides. Preheat the oven to 350°F. Bake the mini tart crusts for 8-10 minutes, or until golden brown. Leave out to cool.

Whisk the sugar and butter together. Beat in the eggs, adding the almonds and flour. Pour the filling into the tart pies and place slices peaches on top. Bake for 30 minutes, or until golden. Let cool. Microwave 2 tablespoons of peach preserve with one teaspoon of water for 20 seconds. Mix well and brush onto the mini peach tarts.
