These cute little pot pies are a fun new way to get beefy! The meaty pot pies are a twist on the traditional chicken pot pie and are just as delicious as they look!

Ingredients

  • 1 box pie crusts, softened
  • 1½ cups frozen peas and carrots
  • 1 tablespoons butter
  • ½ medium onion, chopped
  • ½lb ground beef
  • 1/3 cup beef broth
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Preheat the oven to 400F. Lightly grease a cupcake tray. Split the dough into 2 even parts and cut one of the halves into 6 even parts. Fill the cupcake tray with the 6 pieces, pressing it to the bottom and sides. Bake for 7-10 minutes, or until slightly browned, remove and reduce the heat to 350F. In small bowl, heat the frozen veggies with 2 teaspoons water, tightly covered with plastic wrap for 3 minutes and set aside. In a skillet, heat the butter and add onion. Cook for 3-5 minutes and then add the beef to the skillet, cooking for 5-7 minutes. Add the broth, salt and pepper and cook for 3-5 minutes. Stir in the veggies and mix well. Fill each cupcake cup with ¼ cup of the beef and then cut the rest of the dough into 6 pieces. Cover each mini pie with the dough and bake for 30 minutes, or until the crust is golden brown. Let stand for 10 minutes before removing from pan.
