  • 2 cups of shortbread cookie crumbs
  • 1 stick of butter
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 packages cream cheese
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla
  • 1 can blueberry pie filling

In a food processor, grind the cookies until they become crumbs. Pour in the stick of butter and brown sugar and continue to process. While the crust is blending, line a cupcake or muffin pan with cupcake liners. Pour about a tablespoon of crust into each liner and flatten with the round end of a spoon.

Using a hand mixer, mix the cream cheese, vanilla, and heavy cream. Slowly pour in the granulated and continue to mix. Pour the cream mixture into each of the muffin tins. Spread the blueberry filling on top. Refrigerate for 2 hours and serve.
