  • 1 box refrigerated pie crusts, softened as directed on box
  • 2 eggs
  • 1/3 C. half-and-half
  • 1/2 C. feta cheese crumbles
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 pkg. frozen chopped spinach, thawed

Preheat the oven to 375 degrees and roll out the pie crusts. Cut them into smaller circles and place in muffin cups. Combine the eggs, half-and-half, cheese, salt, and nutmeg. Stir well and add the spinach. Divide the mixture into the dough cups and bake 25 minutes until golden brown. Cool 10 minutes before serving.
