  • 1 (12 oz.) package vanilla wafer cookies
  • 2 (8 oz.) packages cream cheese, softened
  • ¾ C. sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 (21 oz.) can cherry pie filling

Directions

Preheat oven to 350 degrees. Use a food processor to pulse vanilla wafers until crumbly. Set aside about ¼ cup and use remaining crumbs to fill the bottoms of cupcake liners. In a large bowl, beat together cream cheese, sugar, eggs, and vanilla until smooth and creamy. Spoon into liners over cookie crusts and bake for 15 minutes until the center is set. Let cool and top with cherry filling and extra cookie crumbles.
