This recipe gives a fresh take to veggie pizzas and its really easy to make. Switch it up with toppings of your choice, toss it in the oven and you’ll have appetizers for the whole party in no time.

  • 1 large eggplant; sliced ½ inch rounds; leave skin on
  • Cherry Tomatoes; diced
  • Shredded mozzarella cheese
  • Spinach leaves; chopped
  • Peppercorns; garnish
  • Bay leaves; garnish
  • Olive Oil

Preheat the oven to 350 F.

Place the eggplant slices on clean paper towels and leave it for 10-15 minutes for some of the water to come out.

After that, lightly press down on the eggplant to get the excess water out.

Then, prepare a baking tray and line it with some tin foil. Drizzle it with some olive oil.

Neatly arrange the eggplant slices onto the tray and sprinkle some salt over them. Then toss it in the oven and bake for 20 minutes.

When it’s done, remove and begin adding the diced tomatoes, spinach and cheese. Put the tray back in the oven and bake again for another 10 minutes until cheese has melted.

Remove tray and sprinkle over some peppercorns and garnish with the bay leaves.
