What's better than pie? Mini pies. All you have to do is double a regular pie recipe and prepare in tiny pie pans. Here's how to make petite versions of French silk pie.

  • 4 pasteurized eggs
  • 2 sticks butter
  • 1 1/2 C. sugar
  • 2 tsp. vanilla
  • 6 oz. chocolate chips, melted
  • Graham cracker crumbs
  • Whipped cream

Pour graham cracker crumbs on bottom of a dozen mini pie pins. Use an electric mixer to cream butter until it becomes fluffy. Add sugar, vanilla and chocolate chips. Mix until creamy. Add one egg at a time until well mixed. Pour on graham crackers for each tin. Top with whipping cream and chill overnight. Drizzle with chocolate sauce before serving.
