  • 2 sticks butter, softened
  • 1 tsp. vanilla extract
  • 1/3 C. sugar
  • 2 C. all-purpose flour
  • 1/3 C. rice flour
  • 1 tsp. lemon zest
  • 2/3 C. fruit mince

Directions

Preheat oven to 350 degrees. In a bowl, use an electric mixer to beat together butter, vanilla, and sugar, until pale and fluffy. Stir in flour, rice flour, and lemon zest. Spoon mixture into mini muffin tins and press in to make the shape of a small tart. Fill with fruit mince and bake for 12 to 15 minutes until golden.
