These mini truffles are made with lemons and cake mix. They are cakey but at the same time taste tangy.

  • 1/2 box of Lemon Cake Mix
  • 1/2 stick of butter, melted
  • 1 tablespoon Lemon Juice
  • ½ cup Sugar, divided

Prepare a cookie sheet with a sheet of wax paper or parchment paper.
Melt the butter in a dish then heat on high for 45 – 60 seconds.
In a large bowl add the cake mix, juice, sugar and the butter and mix well until the dough begins to form. Then roll the lemon truffle dough into 10-15 cake pop size balls, approximately 1 ½ inch balls.
Pour the remaining sugar in a shallow dish then roll each lemon truffle in the sugar until they are completely coated.
Place Lemon Truffles on prepared lined cookie sheet then chill them until they are set. Before serving them, allow the truffles to sit at room temperature for 15-20 minutes.
