  • 1 1/2 C. crushed butter crackers
  • 2 C. grated Cheddar, divided
  • 4 Tbsp. butter, melted
  • 2 Tbsp. cold butter, chopped
  • 4 C. cooked elbow macaroni, drained
  • 2 large eggs, beaten
  • 1/3 C. milk
  • 1/4 C. sour cream
  • 1/4 tsp. salt

Preheat the oven to 350 degrees. Prepare 8 cups of a muffin pan with cooking spray. In a bowl mix the crackers, 1 cup cheddar, and melted butter, Divide the mixture into each muffin cup and press to the bottom. In another bowl mix the macaroni and 1/2 cup cheddar. Combine the eggs, milk, sour cream, cold butter, and salt in a small bowl. Stir the milk mixture into the macaroni. Spoon the macaroni mixture into each muffin cup and top with the rest of the cheese. Bake 25 minutes until browned and bubbling. Cool before serving.
