  • 1 ¼ C Graham Cracker Crumbs
  • 2 tbs Sugar
  • 1/3 C Butter
  • Cheesecake:
  • 1 ½ 8-oz pkgs Cream Cheese, softened
  • 1/3 C Sugar
  • 2 tbs Fresh Lime Juice
  • 1 tsp Vanilla Extract
  • 2 large Eggs
  • ½ C Fresh Blueberries

Begin this recipe for mini mason jar blueberry cheesecakes by preheating your oven to 325 degrees. Continue by preparing 12 mini mason jars and spraying the bottoms with cooking spray. Set aside while you make your crust.

Mix together the graham cracker crumbs an sugar in a medium bowl. Drizzle the melted butter over the top and stir until fully combined and crumbly. Press approximately one and a half tablespoons of this graham cracker crumble evenly into the bottom of each mason jar and bake for about six minutes. Let rest for 10 minutes before using.

In the meantime, beat together the cream cheese, sugar, lime juice, and vanilla on medium speed in the bowl of your electric mixer. Once well combined, crack the eggs in one at a time, being sure that each egg is fully incorporated before adding the next. Transfer this mixture into the mason jars. Top with your blueberries. Once filled, set in the oven to bake for about 15 to 18 minutes or until the cheesecake is beginning to set.

Cover and refrigerate for at least four to six hours before serving.
