Ingredients

  • 10 Tbs. butter, softened
  • 1 3/4 C. granulated sugar
  • 1 tsp. vanilla extract
  • 3 large eggs, whisked and divided
  • 3 C. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 C. fat-free buttermilk
  • Pink vanilla frosting:
  • 3 C. powdered sugar
  • 1/3 C. butter, softened
  • 1 1/2 tsp. vanilla
  • 1 Tbs. milk
  • 1 drop red food coloring

Preheat your oven to 350 degrees. Grease mini-bundt pans with butter. Combine the sugar, butter and vanilla in the bowl. Use an electric mixer to beat for 2 minutes at medium speed. Add the whisked egg and beat well. Combine the flour, baking soda, and salt in a bowl. Add the wet mixture to the dry mixture slowly and blend between additions. Add 1/3 C. batter into each hole in the bundt pan. Bake for 15 to 20 minutes. Cool in the pans for 5 minutes. Remove bundt cakes from pan and set on wire rack. For pink vanilla frosting, mix sugar and butter with electric mixter on low speed. Stir in vanilla and milk. Beat until frosting is smooth. Add food coloring and mix until pink. Spread frosting gently on cakes before serving.
