  • 1 1/2 C. graham cracker crumbs
  • 1 C. fresh or frozen blueberries
  • 16 oz. cream cheese, room temperature
  • 1/4 C. plus 2/3 C. granulated sugar
  • 3 large eggs, room temperature
  • 1/4 tsp. lemon zest
  • 1 tsp. vanilla
  • 1/3 C. Greek yogurt
  • 6 short wide-mouthed jars

Preheat your oven to 325°F and bring a medium saucepan filled with water to a boil. Place 1/4-cup of graham cracker crumbs in the bottom of each jar and set aside. In a large bowl, beat together sugar and cream cheese. Whisk in eggs one at a time. Stir in lemon zest and vanilla. Fold in Greek yogurt and mix until incorporated. Distribute cream cheese mixture into each jar and top with a handful of blueberries. Arrange the jars in a large roasting pan and carefully pour the boiling water to form a bath around them. Bake in the oven for 35 minutes. Bring to room temperature before refrigerating for at least four hours.
