  • 6 granny smith apples, peeled, seeded, and diced
  • 1/2 C. dried sweetened cranberries
  • 1/2 C. dark brown sugar
  • 1 tsp. ground ginger
  • 2 tsp. ground cinnamon
  • 1 tsp. freshly grated nutmeg
  • 1 lemon, juiced
  • pinch of salt
  • 1 refrigerated pie dough
  • 1 egg, lightly beaten

Preheat your oven to 400°F. In a large bowl, combine apples, cranberries, brown sugar, ginger, cinnamon, nutmeg, lemon juice, and salt. Toss to combine. Roll out the dough and use the ramekins to cut out four crusts that are a bit larger than the mouth of each dish. Spoon the apple mixture evenly into each ramekin and cover with the pie dough. Pinch the edges to seal and slit the top with a fork. Brush each crust with beaten egg. Place on a baking sheet and cook for 25 minutes. Serve immediately or at room temperature.
