This fun variation of brownies combines chocolate brownies, chocolate chips, and fresh mint.

  • 1 ½ cup chocolate chips
  • 2/3 cup mint chocolate chips
  • ½ cup butter
  • 1 ¼ cup flour
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Melt 1 cup chocolate chips and butter in a saucepan over low heat. When the chocolate begins to melt, remove it from the heat and stir. Continue returning it to the heat and removing it to stir until the chocolate is smooth. Remove the chocolate from the heat and stir in lightly beaten eggs. Then stir in the sugar, vanilla, baking soda, and flour. Stir in the remaining chocolate and the mint chocolate chips. Spread into a greased pan. Bake for 20 minutes and cool completely before cutting into brownie bars.
