  • Chocolate Cake:
  • 2 C. brown sugar
  • 1 3/4 C. chocolate cake mix
  • 1 tsp. sea salt
  • 2 eggs
  • 1 C. buttermilk
  • 1/2 C. coconut oil
  • 2 tsp. vanilla extract
  • Buttercream:
  • 1/2 T. butter
  • 2 tsp. milk
  • 1/2 tsp. vanilla
  • 1 lbs. chocolate
  • 1/4 lbs. white chocolate coating
  • 1/4 C.chocolate chips
  • ΒΌ C. mint extract

Preheat the oven to 350 degrees F. Begin by combining the sugar and chocolate cake mix in a large bowl. Once the mixture is smooth, add the eggs, buttermilk, oil, and vanilla. Once the mixture is thin, pour it into a greased pan. Bake in preheated oven for 35 minutes.

While you wait for the cake to get cool you can start the to make the buttercream. Begin by beating the butter until it turns light and creamy. Now add the vanilla and milk to the mixture until it turns fluffy.

Once the cake is cooled, use your hands to crumble the cake into crumbs. In a large bowl, mix the crumbs with the buttercream, mint extract, and chocolate chips. Mix well until it is moist enough to roll into balls. Then, scoop out a small amount of the cake mixture and form round shaped figures. Cover the cake balls with plastic wrap and refrigerator for at least 2 hours. Meanwhile, in the microwave place the dark chocolate for about 30 second increments. Dip the cake balls into the melted chocolate and then set it aside to dry. Once the cake balls are dry, melt the buttercream in the microwave. Place the mint buttercream in a bag and cut a corner. Drizzle the mint buttercream on top and make any desired design on top of the chocolate covered cake ball.
