  • 250 grams plain flour
  • ½ teaspoon bicarbonate of soda
  • 2 teaspoons baking powder
  • 1 egg
  • 175 grams caster sugar
  • 100 ml vegetable oil
  • 1 1/2 teaspoons peppermint essence
  • 250 ml milk
  • 100 grams milk chocolate chips
  • 100 grams white chocolate chips

Heat the oven to 400 degrees F. Grease out 12 muffin cases.  Mix dry ingredients in a large bowl. Take oil and milk, and mix them together with the peppermint essence and egg in a separate bowl. Now add wet ingredients to the dry ingredients and mix them together till you get a smooth mixture. Put the mixture in the muffin cases, and sprinkle chocolate chips on top. Finally, bake the cases in the oven until they are dark. Allow the cases to cool, and enjoy the fine blend of chocolate and muffins.
