Ingredients

  • 4 artichokes
  • 3 Tbs. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. chopped mint leaves
  • 3 Tbs. water

Directions

Cut off stems and tips of artichokes. Remove outer leaves. Cut each into 10 slices, removing center chokes. Put in skillet with oil, salt, pepper and mint. Cook for 30 minutes.
