Here is a standard Japanese soup that is good for your health. We added tofu, which ultimately makes it the perfect meatless stew.

  • 5 C. vegetable broth, unsalted
  • 2 scallions, white and light green parts only, thinly sliced
  • 1 garlic clove, thinly sliced
  • 2 tsp. grated fresh ginger
  • 3 Tbs. miso, light-colored
  • 2 tsp. low-sodium soy sauce
  • 3 oz. celery, chopped
  • 1 carrot, thickly sliced
  • 6 oz. firm tofu, drained, cut into 1/2-inch cubes

In a medium saucepan over medium-high heat, bring broth to boil. Add scallions, garlic and ginger. Reduce heat. Cover and simmer for 10 minutes. Add miso and stir until dissolved. Add soy sauce, celery, carrots and tofu. Return to a simmer. Continue cooking for 5 to 8 minutes.
