  • 3 Tbs. shallots, minced
  • 2 tsp. Dijon mustard
  • 2 tsp. honey
  • 1/2 C. olive oil
  • 12 C. mixed greens, torn
  • 1 apple, cored, quartered and sliced thin
  • 20 grape tomatoes, halved

In a bowl, combine the vinegar, shallots, mustard, and honey. Add in the oil and whisk until well blended. Season with salt and pepper. Combine the greens, apple, and tomatoes in a large bowl and drizzle with the vinaigrette. Toss to coat.
