  • 6 oz. baby spinach
  • 3 medium beets, cooked, peeled, and diced
  • 1/2 C. crumbled goat cheese
  • 2 Tbs. toasted sunflower seeds
  • 1 Tbs. extra-virgin olive oil, to taste
  • 1 tsp. fresh lemon juice, to taste
