Ingredients

  • Salad:
  • 4 C. mixed greens
  • 1 can artichoke hearts, halved
  • 1/2 C. walnuts
  • Dressing:
  • 1/3 C. vegetable oil
  • 3 Tbs. sugar
  • 2 Tbs. red wine vinegar
  • 1 Tbs. sour cream
  • 1 1/2 tsp. Dijon mustard
  • 1/2 C. fresh raspberries, reserving a few for garnish

Directions

Combine first 5 dressing ingredients.  Gently fold in raspberries.  Arrange greens on individual plates.  Top with artichoke halves.  Drizzle with dressing and sprinkle with nuts and a few extra raspberries.
