Ingredients
- 1 sm. onion, finely chopped
- parsley, finely chopped
- 1 garlic clove, finely chopped
- salt, to taste
- pepper, to taste
- pinch of oregano
- 1 can mixed vegetables, strained and rinsed in cold water
- 2 cans lg. peas, strained and rinsed in cold water
- 1 can artichokes, strained and rinsed in cold water
- 2 potatoes, cut in small pieces
- 1 carrot, cut in small pieces
- 1 Tbs. vegetable oil
- 2 sm. cans tomato sauce
- 6 oz. water
Directions
In a baking dish on top of stove, sauté onion with vegetable oil, parsley and garlic. Add salt, pepper and oregano. Add peas, mixed vegetables, artichokes, potatoes and carrots. Sauté together. Add tomato sauce and 6 oz. water. Place in oven at 350 degrees for 45 minutes.
