  • Truffles:
  • 1 bag semi-sweet chocolate chips
  • 8 oz softened cream cheese
  • 2 T instant coffee powder
  • 2 T water
  • Coating:
  • 6 oz semi-sweet chocolate chips
  • 1 T shortening
  • 1 C chocolate sprinkles

First, line a baking sheet with foil or parchment paper. Next, pour 24 ounces of chocolate chips into a microwave safe bowl. Melt the chocolate chips in 30 second intervals, stirring chocolate until it’s completely melted. Then, stir in instant coffee powder, cream cheese, and water, mixing until smooth. Chill the chocolate for about 30 minutes until firm.

Shape the chocolate into balls about one inch wide. Place truffles on the baking sheet and put them in the refrigerator to chill and harden.

While truffles are chilling, melt six ounces of chocolate chips with shortening in the microwave, stopping to mix every 30 seconds. Once chocolate is done melting, remove truffles from refrigerator and dip them in the melted chocolate. While chocolate is still wet, top each truffle with a layer of sprinkles.

After each truffle has been coated with chocolate and sprinkles, place them again on the covered baking sheet and chill for about 30 minutes until firm.
