These granola bars are inspired by the Coconut Mocha drink at Starbucks. These are absolutely divine---the friends I've gifted these to go crazy for them.

  • 2 1/2 C. old-fashioned oats
  • 1 C. whole wheat flour
  • 1/4 C. brown sugar
  • 1/2 C. shredded sweetened coconut
  • 3/4 C. chocolate chips
  • 2 Tbs. cocoa powder
  • 2 tsp. instant coffee powder
  • 1/2 tsp. salt
  • 1 whole egg, beaten
  • 2 tsp. vanilla extract
  • 1/2 C. coconut oil
  • 1/2 C. honey

1. Preheat oven to 350F. Line a 9 x 13 pan with aluminum foil and spray with cooking spray.
2. In a large bowl, mix oats through salt. Stir in the wet ingredients (egg through honey) and mix well to combine.
3. Pour mixture into prepared pan, spreading evenly with a spatula. Bake for 15 minutes and remove from oven. Allow bars to cool before slicing. Store in the refrigerator, closed in an airtight container.
