If you have orzo in the house instead of rice, you can still whip up a batch of this easy tasty fried rice recipe. I started making my Fantastic Fried Rice the other day and realized I ran out of a major ingredient, so I made this one up and it was a hit. I served it with my Chinese Sweet and Sour Chicken.

Ingredients

  • 3/4 lbs. orzo pasta (or rice), cooked
  • 1 sm. white onion, diced
  • 2 scallions, chopped
  • 1/2 sm. head bok choy, chunked, (optional)
  • 1/2 Tbs. sesame oil
  • 1/2 Tbs. light oil
  • 2 garlic cloves, grated
  • 1/2 inch fresh ginger root, grated
  • 1/2 box frozen peas, thawed
  • 1 sm. can diced water chestnuts, drained
  • 1/4 C. shredded carrots
  • 3 oz. chicken breast or ham, cooked, diced (optional)

Directions

Cook orzo in salted water and drain. Saute garlic, onion, ginger, scallions and bok choy in both oils. Add remaining ingredients (including cooked orzo) and stir well to heat through.
