Mock Sloppy Joes
- 2 lb. lean ground beef (or turkey or ground chicken breast)
- 1 1/2 jars or cans beef gravy, divided
- 1 sm. onion, sliced
- 1/2 C. baby carrots, blanched or microwaved 4 minutes with water, drained
- 1 tsp. onion powder
- 1 tsp. dried parsley
- 4 grinds black pepper
- 2 Tbs. grated Parmesan cheese
This entire recipe can be made in the slow cooker; however, if you have meat that isn't too lean, I would suggest cooking on the stove top.
Place all ingredients except 1/2 cup of the gravy into the slow cooker. Cook on high for about 4 hours.
Brown meat. Add onions and cook until almost tender. Drain all the fat. Add all remaining ingredients and cook until carrots are tender.
Serve over mashed potatoes or buttered noodles. I made bread bowls from crescent rolls and served the meat in there.
Sprinkle with Parmesan cheese.
