Mock Sloppy Joes

I ran out of the usual sauce for Sloppy Joe's so I thought to use the gravy. It was something different and the kids enjoyed it too.

  • 2 lb. lean ground beef (or turkey or ground chicken breast)
  • 1 1/2 jars or cans beef gravy, divided
  • 1 sm. onion, sliced
  • 1/2 C. baby carrots, blanched or microwaved 4 minutes with water, drained
  • 1 tsp. onion powder
  • 1 tsp. dried parsley
  • 4 grinds black pepper
  • 2 Tbs. grated Parmesan cheese

This entire recipe can be made in the slow cooker; however, if you have meat that isn't too lean, I would suggest cooking on the stove top.

Slow cooker:

Place all ingredients except 1/2 cup of the gravy into the slow cooker. Cook on high for about 4 hours.

Stove top:

Brown meat. Add onions and cook until almost tender. Drain all the fat. Add all remaining ingredients and cook until carrots are tender.

Serve over mashed potatoes or buttered noodles. I made bread bowls from crescent rolls and served the meat in there.

Sprinkle with Parmesan cheese.
