These moist blueberry banana muffins are to die for. The blueberries and bananas compliment one another, very well.

  • ½ C. butter
  • 1 C. blueberries
  • 1 C. sugar
  • 2 C. flour
  • 2 eggs
  • 3 mashed bananas
  • ¼ tsp. salt
  • 1 tsp. baking soda

Preheat the oven to 350 degrees. In an electric mixer, combine the butter and sugar. Add in the eggs and mashed bananas. Mix well. In a separate bowl, combine the flour, salt and baking soda. Add in the flour mixture, slowly. Add in the blueberries. Mix softly. Grease a 12 C. muffin tin with a non-stick cooking spray. Divide the batter into each muffin liner. Bake for 30 minutes. Let cool on cooling rack. Serve and enjoy.
