Ingredients

  • Cake:
  • 1 ½ C. flour
  • 1 C. plain yogurt
  • 1 C. sugar
  • 3 eggs
  • 1 T. orange zest
  • 2 tsp. baking powder
  • Juice from 1 orange
  • ¼ tsp. salt
  • 1 packet of vanilla sugar
  • ½ C. olive oil
  • 1 C. fresh cranberries
  • Icing:
  • 1 C. powdered sugar
  • 3 T. cream

Preheat the oven to 325 degrees. Grease a loaf pan and add parchment paper. Combine the baking powder, flour and salt. Set aside. In a separate bowl, combine the yogurt, sugar, eggs, orange zest, orange juice, olive oil and vanilla sugar. Combine both mixtures. Add in the cranberries. Transfer batter into loaf pan. Bake for 45-50 minutes. Combine the icing ingredients. Spread over loaf cake. Serve and enjoy.
