Spice up your zucchini bread with some herbs and garlic! Though the bread is sweet, the garlic and basil compliment the flavor of zucchini. You'll never want regular zucchini bread again!

Ingredients

  • 1 ½ C. flour
  • 1 ¾ C. shredded zucchini
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 2 tsp. cinnamon
  • ½ tsp. ground nutmeg
  • 2 small eggs
  • ¼ C. applesauce
  • ¼ C. vegetable oil
  • 2 tsp. vanilla extract
  • 1 C. granulated sugar
  • 3 leaves of basil, minced
  • 1 Tbs. butter, melted
  • 1 tsp. garlic, minced

Preheat the oven to 350 degrees. In a large bowl, whisk together all of the dry ingredients except for the sugar. Using a stand mixer, blend the eggs, basil, sugar, vanilla, oil, sugar, and applesauce. Mix this very well and begin to add the dry ingredients. Stir in little bits at a time. Fold in the zucchini once everything is blended. Bake for about 50 minutes until a toothpick could come out clean. Mix the butter and garlic in a small bowl. Once the bread is cooled, brush it on top of the bread and serve.
