Moist Pineapple-Cherry Upside Down Cake

- 1 box yellow cake mix
- 1 (6 oz.) jar maraschino cherries, drained
- 1 (20 oz.) can pineapple slices, reserve the juice
- 1 C. brown sugar, packed
- ¼ C. butter, melted
Preheat the oven to 350 degrees. Place the butter in a long pan and sprinkle the brown sugar over it. Place the pineapples in the pan in a single layer and place a cherry in the center of each ring and around them. Mix the remaining pineapple juice with water to make one cup. Make the cake batter according to the package’s instructions substituting the water for the pineapple water mixture. Pour the batter over the fruit and bake the cake for 42 to 48 minutes. Cool the cake for half an hour and flip upside down and serve.
