  • Cake
  • 8 blue plums, pitted, peeled, and sliced
  • ¾ C. granulated sugar
  • ⅓ C. sour cream
  • 6 Tbs. unsalted butter
  • 2 large eggs
  • 1 lemon rind
  • 1 C. all-purpose flour (+2 Tbs.)
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • Caramel
  • 1 C. granulated sugar
  • ⅓ C. water

Preheat the oven 350 degrees. Place the caramel ingredients in a saucepan on medium heat. Don’t stir the mixture until the caramel is amber. Grease a 9-in. pie pan with butter and place the plums in cut side down. Pour the caramel over the plums and set aside. Cream the butter and sugar using a mixture. Slowly add in the eggs, sour cream, lemon zest, and vanilla. Whisk together the flour, baking soda, and salt and fold into the butter mixture. Pour the batter into the pan and bake for 30-40 minutes.
