Mom's Banana Bread

Just like mom used to make--and now you know why she kept all those overripe bananas in the freezer!

  • 1 C. mashed overripe bananas (about 3 bananas)
  • 3/4 C. sugar
  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract or almond extract
  • 2 eggs
  • 1 stick (8 Tbs.) butter, softened or melted
  • 1/4-1/2 C. walnuts (optional)
  • 1/4 C. chocolate chips (optional)

Preheat oven 350 degrees. Combine all ingredients in a large bowl. Mix well. (HINT: Sift flour, sugar, and baking soda!) Pour into greased loaf pan. Bake for 1 hour at 350 degrees. Cool on rack when done. Serve warm or at room temperature with butter or your favorite topping.

    Since the recipe says loaf pan not pans, that tells me one loaf pan. Plus a loaf pan is usually standard size.

  • Ok, If i made this bread. I would really like to know what size loaf pan and how many to use????? It would have really help me if you would have stated in the directions..
