  • 6-8 large chicken breasts
  • 6-8 Tbs. pickle relish
  • 1/4 C. mustard to taste
  • 1 C. mayonnaise
  • 1 1/2 C. self-rising flour
  • 1/2 C. water

Mix relish, mustard and mayonnaise and allow mixture to marinate over night. Next day, cook chicken in boiling water after removing skin. Take chicken out while it is still hot and remove meat from bones. Add marinade mixture to chicken and flour and water in large mixing bowl, mix thoroughly and make small nuggets with mixture , approx. 1 inch in diameter. Place in skillet in 2 inches of canola oil and brown on each side.
