Special Mother's Day Entry This is one recipe that must be at all of our family gatherings. Everyone knows to get there early if they want the potatoes. People who swear by fresh, peeled potatoes, love these. My daughter is one person who makes homemade mashed potatoes and she LOVES these. They are popular with our family in Illinois all the way to our friends' house in New Mexico. My mother, Shirley Talarico gave us this recipe when we were kids. There were 13 of us. We all love these potatoes that go well with anything. Beef sandwiches, turkey, roast beef, etc.

Ingredients

  • 6 C. water
  • 4 C. milk
  • 2 sticks margarine
  • 3 tsp. salt
  • 8 C. instant potatoes
  • 16 oz. cream cheese, softened
  • 2 C. sour cream
  • 2 tsp. garlic salt or powder
  • 4 Tbs. chives, optional
  • Paprika

Directions

Heat water, milk, margarine and salt to scald. Add instant potatoes. Stir until smooth. Add remaining ingredients. Top with paprika. Ready to serve. If you make this early in the day for an afternoon party, prepare on the stove. Put in crock pot, top with paprika, keep on low until ready to serve.
