  • ½ lean turkey meat
  • 1 onion (chopped)
  • 4 cups spinach
  • ½ cup crumbled bread of your choice
  • 2 tbsp Dijon mustard
  • 1 large egg white
  • ¼ C ketchup
  • 1 red pepper (chopped)
  • 1 tbsp extra-virgin olive oil
  • ¼ cup jarred marinara sauce, warmed
  • 2 tbsp brown sugar
  • Salt and Pepper for seasoning

Preheat the oven to 400 F. In a bowl combine turkey, onion, breadcrumbs, egg white, ketchup, red pepper, mustard, and salt for seasoning.

Grease a 10-inch loaf pan. Transfer mixture to the baking tin. Glaze with egg white.

Bake for 30 minutes. Serve and enjoy.
