Mom's Fruit Cake

This is an unusual fruit cake in that the basis of it is a white cake and it doesn't contain the standard fruits and nuts normally found in fruit cake. It is a traditional item baked at Christmas time.

  • 2/3 C. butter
  • 2 C. flour
  • 1/2 tsp. baking soda
  • 1tsp. lemon juice
  • 6 egg whites, beaten stiff
  • 1 1/4 C. powdered sugar
  • 1 tsp. almond extract
  • 2/3 C. almonds, chopped
  • 2/3 C. red candied cherries, chopped
  • 2/3 C. green candied cherries, chopped
  • 2/3 C. candied pineapple, chopped
  • 2/3 C. golden raisins

Cream the butter, flour, baking soda, and lemon juice. In a separate bowl beat egg whites until stiff and add the powdered sugar. Combine the two mixtures and beat until smooth. Add the almond extract and mix well. Fold in the nuts and fruits. Pour into a well-greased and floured springform pan. Bake at 250 degrees for 1 hour. Cool completely then wrap in cheesecloth soaked in amaretto, wrap inside of foil and place in refrigerator. The longer this ages the better the cake will be. Resoak the cheesecloth every 2 weeks.
