This Mexican casserole recipe came from my mom. It can be easily divided into 2 smaller casseroles for freezing.

Ingredients

  • 1 1/2 lb. ground beef
  • 2 Tbs. oil
  • 1 medium bell pepper, diced
  • 1 large onion, diced
  • 7 oz. pkg. egg noodles, cooked and drained
  • 1 28 oz. can diced tomatoes, undrained
  • 1 can corn, drained
  • Salt and pepper, to taste
  • Chili powder, to taste

Directions

Wilt onion in oil, add meat and brown. Add bell pepper, tomatoes, and seasonings; simmer 15 minutes. Add corn, cheese, and noodles to meat mixture. Stir until cheese is melted. Pour into a greased 9x13 casserole. Bake at 325 degrees for 40-45 minutes.
