  • 1 Tbs. ginger root
  • 2 garlic cloves
  • 1 1/2 tsp. cayenne pepper
  • 1 Tbs. vegetable oil
  • 1 1/2 C. onion, chopped
  • 2 1/2 C. chopped cabbage
  • 2 1/2 C. Stahlbush Island Farms diced sweet potatoes
  • 4 C. organic vegetable broth
  • 1/2 C. natural peanut butter
  • 1 C. chopped tomatoes
  • 1 Tbs. soy sauce
  • 1 oz. bean sprouts
  • 1 Tbs. cilantro
  • 1 Tbs. scallions

Cook ginger, garlic and cayenne in oil for a few minutes before adding onions and salt. Cook until onions soften about 5 minutes. Stir in cabbage and sweet potatoes, and 3 1/2 C. of broth. Cover and bring to a boil, then turn down the head and simmer for 15 minutes.

Whisk together peanut butter and remaining broth, add soy sauce and add that along with the tomatoes and cook 5 more minutes. Serve, and top with cilantro, scallions and mint or basil.
