Mother Van Hecke's Avocado and Grapefruit Salad

It may sound like ugg but believe me when you try it, it will become one of your favorite salads of all time. It's cool and refreshing and there are many ways to plate it.

Ingredients

  • 1 ripe avacado
  • 1 pink grapefruit or a jar of pink grapefruit slices
  • French dressing
  • Lettuce

Directions

Take avocado pit and remove peeling. Section grapefruit, place lettuce on plate, place avocado in fan-like position on plate on top of lettuce then alternate the grapefruit sections with the avocado. Drizzle French dressing on top of it. I like to save time by purchasing the grapefruit already sectioned in the produce dept of your grocery store.

  • I made the grapefruit spinach salad, it was pretty good, but not excellent. I think the grapefruit juice was too bitter to use in the dressing, I would have used some rice vinegar. It also needed salt. The combination of spinach and grapefruit and almonds was really good. I recommend this recipe, tweak the dressing to fit your taste
